I guess I had it wrong. But, I am brewing an Oatmeal Stout tomorrow and want to be certain. I had thought I understood that only the 'instant' oatmeal was pre-gelantized...
So, I do NOT need to do an adjunct mash with the oats (boil them), I CAN add these oats directly to the mash??? Thanks |

No you don't need to do a cereal mash with them to use it.
You can just add it to the mash. Sometimes though I do boil them for a while before using, but haven't noticed any difference, so I quit doing it. |

Almost all the oats you buy are gelatinized. Rolled oats are flaked (like flaked barley), then there are quick and instant oats. All all gelatinized, but instant are more processed than quick, and quick more processed than rolled. Only "steel cut" or "raw" oats need to be cereal mashed. And I think you have to cook those a really, really long time, so I wouldn't try it.
