I had tried my hand at harvesting my yeast for the first time, and I decided to see what kind of condition it was in. I got the starter ramped up well with a boiled brown sugar and honey mix. Once activity was strong, I pitched it into the following mix:

1 gallon of preservative-free local cider
3 gallons of all-natural apple juice, preservative-free
3 cinnamon sticks, broken into thirds and boiled in 2 cups of water with 1/2 cup of brown sugar.

OG = 1.050

I used a harvested SafAle US-05, so I kept the primary at 74.

3 days later, FG=1.012, so I bottled and cold conditioned it immediately to avoid bottle-bombs. The carbonation was higher than I would have preferred, as to be expected with bottling it before the yeast was done doing it's thing. There was quite a bit if sedimentation and it was quite cloudy, but it was one tasty cider! It tasted like bubbly apple pie. I'm not a big cider guy, and like I said, this was basically an experiment, but it might be useful to someone.
