Good morning all,

I am looking for some suggestions for a small (maybe 1gal) batch of maybe raspberry or blueberry melomel (I have just completed a 5.5gal batch of blackberry and am looking for a bit more fruit aroma/flavor with less required aging/mellowing time). For my prior attempt I used a champagne yeast and added the fruit to the primary. I think this time I will be adding fruit to the secondary and using a less alcohol tolerant strain...

I am also thinking about fermenting in a 1gal jar then racking to a 6gal pail to make adding the fruit easier...do you think there will be enough CO2 in the 2ndary to avoid oxidation in such a large vessel (maybe I will transfer with more residual sugar this time to keep CO2 levels higher)?

Any and all suggestions/recipes/comments are greatly appreciated!
