I was thinking of doing an Imperial IPA with only Golden Promise Malt.
I don't think it would be "too dry" for the following reason: Since the O.G. and F.G. would be relatively higher than normal, my thinking was that no crystal malts would be necessary for sweetness. Really would want to showcase just the GP, which is notorious for having a natural "perceived sweetness", which would be balanced by the hops anyway. The only thing I thought might help would be the addition of 1 pound of Carapils for head retention. Yes or No? Discuss. |

Never tried an IPA but I have a pale ale that is just 10# 2row and 3oz cascade and it rocks. Im a fan of simple beers. If you make it and it turns out too dry then you can add a little crystal next time.

A common thought is to avoid crystal malts altogether in big beers (~1.080+). In fact, I've seen many DIPAs use a pound or so of sugar(5gal. batch) to help dry it out or get it to ferment down to their target. Color might be a reason to use a little crystal, but a DIPA would probably get enough color from just the pale malt.
That said, adding a half pound of cara-pils or dextrin malt may help the retention a little, if that is important for this brew. A half pound will not make your DIPA sweet. |

using the amount of hops necessary for a IIPA will help head retention too...or so i have learned since the ML commercials came out....and no I don't think the amount of hops Miller uses for lite effects their head retention...

what OG and FG are you thinkin about? I think that you would be fine doing it. Perhaps you will want some sort of caramel malt/ carapils added to the recipe, but do it without first to serve as a control. Youre not going to make a bad beer either way.
what hop schedule are you thinkin?! |

Going with 8 oz. Carapils with the Golden Promise.
Should I use any sugar (8 oz. or so?) to make sure it dries out? I'm using Rogue's/Wyeast Pacman yeast, which is supposed to attenuate like crazy, so maybe I won't need the sugar??? Here's the tentative hop schedule for the 90 minute boil Too much? I do want the malt to be detectable.... 1 oz. Warrior 90 minutes 1 oz. Challenger and .5 oz. Amarillo 20 minutes 1 oz. Amarillo and 1 oz. Perle 5 minutes 1.5 oz. Amarillo and 2 oz. Challenger 0-1 minutes 2 oz. Amarillo and 1 oz. Riwaka Dry Hop |

should be delish dude. I wouldn't add carapils or sugar - what's the point of doing a single malt brew if you add other fermentables................
Just mash low and it'll dry out fine! Oh and post your results of course. |

I used pacman on my last IPA and it dried out real nice. went from 1.062 to 1.011! tasted amazing too!
