Well, in putting on the regular cap you're releasing the pressure you've put into the headspace. So at a very minimum, CO2 will need to leave the beer to repressurize the headspace. My impression of the regular caps is that they don't hold pressure well because of the all the products out there to replace them. For soda/wine they have a reversible valve cap with a pump. You pump air into a soda bottle to pressurize it to keep the soda carbonated and pump air out of a wine bottle to prevent oxidation. Maybe it's just that the headspace is very large as you're drinking a soda down, but if you're keeping a small headspace then it takes much less CO2 evolving from the beer to pressurize it and the caps are fine at holding the pressure. You just have to wait a specified time I think. |
