Just wondering how the board feels about adding lemon zest and juice, or just whole cut up lemons.

I'd just use the zest. The juice might be a bit much.

I'am with Papasmurf i would use zest only. I think the juice would add a odd flavor especially if it fermented out at all. If you want the juice in i would suggest adding it to the glass while serving.
