I have personal feeling, that holding beer longer during secondary fermentation gets its taste better. The beer bottled 2 month ago is better that the same, but bottled 2-3 weeks ago. Is it true? How long you keep your beer for secondary fermentation?

Most beers need some time for the flavors to mellow. Usually stronger beers and lagers need the most time to age. IPA is an example of a beer that is good after a shorter time (IMHO) as the delicate hop aromas tend to fade quickly. Also, English mild or Hefe-Weizen are beers that are good young. Not just any beer can be brewed, fermented, bottled, carbonated and drunk right away. Time is needed for conditioning.
