I just checked the notes for my Broken House 60 IPA. It calls for 10 g of Simcoe at 60 min, then 2 g of an Amarillo/Cascade/Centennial blend every minute from 60 down to 1, then 15 g of the blend at shut down. I estimated the IBUs at about 62. I just ran it through BeerTools (5 hop additions at a time), and came up with about 69. So, not overwhelmingly hopped, but definitely should have a nice hop domination to it!

My latest version of IPA changed the specialty grain bill a bit. The changes were:
5 oz wheat malt 6 oz carapils malt 6 oz caravienna 3 oz caramunich 10 oz aromatic The base malts stayed the same. That gave me a bit more body, a bit more color, and a nice lingering aftertaste -- at least the gravity sample! The hops also changed a bit. The first four additions are the same, but the last one, at shutdown, should be double the amount (that is, 0.7 oz each). The aroma on this one was awesome! Oh, and I also used Wyeast 1007 German Ale on the latest one -- if you can ferment cool, 55-60F, then give that a try. Great yeast! But really this recipe works well with any yeast (at least the four or five I've tried it with). My next IPA brew will use Wyeast Ale Blend, then 1056 American Ale. I also am expecting some new yeast this week, so I'll probably be making another IPA with each of them. |

I've become very fond of IPA's and next week I'm going to be brewing one, but I just can't see myself added hops at this schedule. Seems like a lot of work! However, I'm going to try the lower AAU, but more of the hop try to see if the bitterness is more smooth or not. keep trucking!

Irish -- Hop schedule looks awesome! And I thought I was a maniac -- now I'll have to think of something else. The combination of Amarillo, Centennial, and Cascade is what really sets this one off, but without a good malt base behind the hops, you'd have a very one-dimensional beer. This has a good malt base (both yours and mine), but massaging is definitely an on-going thing.
The only question I have is why the Fuggle? That seems kind of out of place -- one lone addition of Fuggle surrounded by all those obnoxious American hops -- poor poor British hops. :( (IMG:style_emoticons/brewboard/cool.gif) |

Okay, as requested, this is the exact recipe that I followed for the Hop Hourglass IPA version of this recipe. I didn't make any adjustments for efficiency or anything like that, directly converted from metric to US measurements. You may have to make adjustments for what you can find (as someone mentioned, Northern Brewer is a good substitute for the Simcoe -- you can also use Perle, Willamette, or even Centennial or Cascade or Amarillo).
Hop Hourglass IPA (61-addition hop monster) Mash efficiency = 82%; 5.5 gallons in fermenter, OG = 1.062; FG = 1.015-1.019; 61-63 IBU, 12-13 SRM 9.88 lb Crisp Maris Otter malt 0.29 lb Weyermann light wheat malt 0.31 Briess carapils 0.31 Dingemans caravienna malt 0.24 Dingemans caramunich malt 0.60 Dingemans aromatic malt 0.11 flaked barley Add 0.75 oz Burton salts to mash. Mash grains at 150-152F for 60 min. Add 1 ml phosphoric acid (75%) to sparge water. Lauter and sparge for 85 min. 0.4 oz Simcoe (12% alpha) for 60 min 2 g of "Hop Blend" (6.5% alpha) every minute from 60 down to one. Add all remaining hops from hop blend during cooling. Hop Blend consists of 50 g each of Amarillo (8.3% alpha), Cascade (4.7% alpha) and Centennial (6.6% alpha). I used a very small tupperware cup that held approximately 2-2.5 g. Add 1/2 tsp Wyeast nutrient and 1 whirlfloc tablet for 15 min. Aerate with aquarium pump and air stone for 30 min. Pitch with first generation Wyeast 1026 British Cask Ale -- pitch yeast slurry from 2.5 liter starter. Primary for 6 days, transfer to corny and prime, allow to carbonate for 4-5 days, chill for at least one day, and enjoy. Prime with rock candy sugar (I used 1.5 oz in a corny, but that was too little). Allow to condition and enjoy. Note -- I cask conditioned and tried the first pint 11 days after brewing. It was fantastic. Now another 3-4 weeks later, it's even better. B) |
