I am not sure who Bridget is, but her beer is outstanding. I really enjoyed this saison, and got many compliments from my friends. I am definately brewing this one again.

I actually drank the last bottle of my first batch Friday night.
It was a bit sweet. Juicey Fruitish. Spices came throught well. Had some horseyness to it also. Light on the bitterness. I mashed it way too hight so was pretty full bodied. |

I just bottled up my extract kit. It took about 3 weeks in the primary, it was pretty clear after that but I gave it 2 more weeks in a secondary anyway. I'm looking forward to this one

I brewed an all-grain batch of this a few weeks ago. It smells (and tastes) amazing in the fermenter!
One problem: After 2+ weeks in the primary (75F) it's still at 1.030. Looks stuck to me. Any advice? Should I pitch a different yeast to finish it? If so, which? thanks Charles This post has been edited by cscheffold: May 29 2005, 09:02 AM |

Charles,
Both Wyeast and White Lab's Saison yeasts are notoriously slow. You shouldn't need to add any more yeast. Just swirl your fermenter to wake the lazy little guys up and put them back to work. Don't transfer this beer until it hits below 1.020. (IMG:style_emoticons/brewboard/cool.gif) |

Just popped open the first bottle after only 1 week, and already great carb and flavor. Added 1 oz grain of paradise to HBA recipe, but I think it would be great even without. Highly recommended!

Well it took 3 weeks in the Primary, 2 in the secondary, and 3 in the bottle, and it was WELL worth the wait. I've never had a Saison before, but I will definately continue brewing this. I used the extract kit and only did a partial boil. There is no 'extract twang' to it at all.

I finally got around to trying my BLP.
Appearance It pours a lovely head. Color is hazy medium brown with red hints. Exactly the color I think of when I think biere de garde, so it fits my expectations for a saison. Aroma The aroma is of floral coriander, orange, and Saaz. I would not be afraid to up the orange peel to a full ounce. One recommendation is to explicitly state "sweet orange peel" on the recipe, because I feel bitter orange is not right for this recipe. Not sure what HBA ships with the kit. Flavor The wonderful flavors of coriander and orange come through nicely in this beer. However, one ounce of flavoring hops is way too much for a spiced Saison, IMO. I really don't like much hop flavor in my Belgians- it should be about the spices and yeast, and I don't feel that the Saaz flavoring adds to the beer. When I made this beer, I trusted my gut and reduced the flavoring hops by 1/2 oz. Even still, next time I would eliminate it completely. The malt character in this beer is stellar. Great job on the malt bill! The subtle finish provided by the CaraVienne and Aromatic keep you intrigued and coming back for another sip. Another suggestion is that 1388 is really the wrong yeast for this beer. HBA should consider taking that off the recipe and replacing it with 3724 Belgian Saison Yeast. I realize that is supposed to be seasonal, but 1388 really doesn't do saisons justice. 1388 lends a bit of "rumminess" to a beer when sugar is added, which I find misplaced in a saison, and it lacks the bubblegumminess of a true saison yeast. Overall impression I really want to say I love it, but every sip I take, I find myself wishing there weren't as many flavor hops in it clouding the other tastes. The fantastic malt bill and perfect spice balance make this beer a six. Kick the Saaz flavor hops and use true Saison yeast, and it would probably work up to a 9 or maybe even 10! HD |

You know, I can't be too descriptive about color, body and hints of this and that, but I can say all those who drank it agreed it had something a little extra in it. I clocked it at about 6.5 percent but it was something else - you know how when you drink some brown liquor after it's been a while, and something seems to shift in your head - kinda like that. Keg lasted 2 weeks. Great Labor Day cookout beer.
Beware though - it made my GF want to have annoying relationship talks. Cheers - |
