With a little age, this beer is GREAT. I have 3 bottles remaining from over a year ago. Recommend brewing this at least 6 months out before the holidays.

A very good beer with age. Cut back on the Cloves. Juice the Vanilla if you desire and add a little extra cinnamon. Age for at least 6-8months and you will have a nice enjoyable beer.

I brewed mine in November, and it is still in the secondary. Looks nice, will probably bottle here in a bit and put up in the closet until Christmas! I can't wait, heeard only good things about it. I also cut the cloves back!

yep, good beer with proper aging.
I agree, cut back on the cloves and add more vanilla... my first attempt at this turned out to be a rather nasty tasting concoction (spices were overpowering). |

did this last fall - I might cut back on the spices as well. it was a big hit with all who drank it. I didn't let it age much though - may try another batch in august or so.

I did this one back in college, when we were notorious for not being able to wait long enough for proper aging. It was a bit sweet & somewhat assertive (which is to be expected without the proper aging) but even then I enjoyed it, for the first bottle. But the women said they loved it. So I fed them that while I enjoyed a brown ale. I brought a fair amount home for the holidays and my pops let some of the bottles cold condition for quite some time and enjoyed them thoroughly. I'll have to give this one another try, maybe brew it soon so I'll have some decent aging before Christmas.

Aging is the key. I wish I would have cut back on the spices too. I brewed this back in Oct. 2004 and I still have a case left. It is getting much better with age and cold conditioning is helping a great deal. I think it will be perfect for this coming Christmas.

Hop Mania, I brewed mine a month ago yesterday, so I am hoping also that we have a enough time for the holidays. I did cut back on the cloves a bit so I hope that will help mellow it quicker. I have sampled MEL's version of this beer and it is darn good.
BTW Hop Mania, we should swap a couple beers since we are so close. |

I brewed this recipe this month. Should I cold condition this beer or just let it sit till next year. I have prepared a case and closed it up and wrote on the box do not open till 10/06.

Threw this in my kegerator yesterday. It's not carbed up yet to the desireable levels, but upon tasting the first sample in my 7 oz tasting glass (and the 2nd and 3rd), I can honestly say that this is a fantastic beer. I have had this bulk aging in a keg since the beginning of September, so a little under 3 months. I'll definitely make this one again for next winter. (IMG:style_emoticons/brewboard/smile.gif)
