BD, you inspired me. I didn't have any pineapple on hand, but I did have some frozen juice concentrate. I found a wine recipe, did some thinking, and when the pain stopped, came up with this one gallon test batch.

1 quart Pineapple juice
1 can Pineapple juice concentrate
2.5 lbs honey (some cheap blend Kroger had on sale, it's tasty)
25(ish) chopped raisins
Water
Lalvin D47 yeast

I mixed the must and pitched the yeast late Monday night. By Tuesday night I had delicious smelling (and tasting) foam coming up through the airlock.

Keeping my fingers crossed....
