Just bottled mine yesterday, roughly 90 days from the start. Made it exactly like the recipe with no variations. Made 2 gallons which filled 15 beer bottles, with a half a bottle left over to drink now. Made it in a 3 gallon glass carboy - had lots of head space with no ill effects. Everything was clear and settled in 60 days.

This is a very good, sippable mead. Lots of honey and spice flavors. Drinking it in a white wine glass at room temperature and probably would not drink it cold. Could see heating it up a tad and sipping it out of a brandy snifter. Or as SWMBO says, you could drink that instead of B and B!

I got interested in this in november and made a one gallon batch useing 1/2 cup dried rosehips instead of the tangerines. o.g.1140, added edme yeast and after 3 days no action added pkt cotes de blanc yeast and it took off gurgling like a mountain brook, bottled at xmas and now 02/25/08 tastes like a semi dry sherry. this will go on my list for spring to have next xmas for after dinner treat. my notes show it coming in at 15% abv. thank you for the recipe start.

2 months in the bottle and still very good. Drinking a brandy sniffer full right now. Should start another batch soon....
