While reading the group brew thread for the Deep Blue, I read Hopheads post about Apple Butter Cyser. I PM'ed Hop, and while we both have had samples, neither of us have brewed it. So, we both thought that a group brew would be in order for this as well. So please read the recipe, I am posting it as is, from the Brewrats web site, because simply, I don't think we can improve it, Cruz put together an excellent recipe.
-10 lb Orange Blossom Honey
-5 Gal unpasteurized Apple Cider (pasteurized will work also)
-2 lbs dark DME
-5 lb Muscavado Sugar
-6-12 cloves
-12-20 pieces of Cassia bark or cinnamon sticks
-1-2 lb of your favorite apple butter
-2 lb of white raisins
-1/2 tsp of fresh Nutmeg (optional, added to secondary)
-Serrano peppers ( very optional)
- 3 tsp of yeast nutrient
-1 litre starter of WYeast 3347
Make 1 ltr starter of 3347 2 days in advance. Place 1 gal of apple cider in a lg pot and heat slowly, adding apple butter, sugar, DME, and honey. You be the judge, but you may need to add a little more cider to liquify all ingredients. Stir frequently. Don't boil the honey it detracts from the flavor. When the mixture is complete, add to fermenter with remaining cider, cassia bark and cloves. Care must be taken not to add to many cloves, as many commercial brands of apple butter have a high clove content. This can lead to an overpowering taste. When the temp is correct, pitch the starter. You may need a blowoff tube as this yeast can be very active. Affix airlock when it settles down and wait 2 mos. If during this time the ferment quits, add some yeast hulls to primary.
Rack to secondary and toss in the 2 lbs of raisins, and Nutmeg, let it sit at 68ยบF for an additional 3-4 mos. You may see additional fermentation from the yeast on the raisins, don't worry!!
If you choose to prime, use 1.25 cups of Lyles Golden Syrup, for the batch. And five or six raisins and a small piece of Cassia bark to ea. bottle. And for something completely different, add a hot Serrano to a couple of bottles. Condition as long as you like, and enjoy.

It doesn't look like we have many people just jumping on this cyser ship. I'm still in. I've been wanting to brew it ever since I first tasted it. It's one of the best treats I've ever had. It'll be my first attempt at a cyser tho so someone is going to have to give me some guidance along the way. (IMG:style_emoticons/brewboard/smile.gif)

first off, do you just get apple butter from the grocery store? Are you people going to make me go to Wellsprings argh!!!

also, any hints on that sugar.

This is the best description I could find for Muscovado sugar. As for a starter, I would just use part of the dark DME that the recipe calls for.

Or African :eh?: I really don't know. I think some big grocery stores carry it. I've been told that but never actually looked for it at the store. The search is on (IMG:style_emoticons/brewboard/smile.gif)

Edit: Maybe health food stores? I bet we could use regular brown sugar in a pinch but I would rather follow the recipe as close as possible.

We have got to be near the 1.200 SG mark so say this makes it to 1.05 we are looking at 20 % (IMG:style_emoticons/brewboard/omg.gif)

damn thats not cheap and no way is this only 1.100.

Unless that sugar has zero sugar in it.

the honey alone will have us at 1.080 ish.

Cider is atleast 1.02's (IMG:style_emoticons/brewboard/sorry.gif) ? I would think.

then the DME, etc.

Cool, I'm glad you guys are doing this!! That is the only place that I've been able to find that sells Muscavado, oh 1 other, but it was slightly more expensive.
BSR, I also have a recipe for this called " Lite Apple Butter Cyser", also from the Brewrat site. Instead of Dark DME it calls for Light DME, and in place of apple butter, it uses Motts Apple Sauce w/ Cinnamon, and 12 lbs of honey. I have tasted this also, and it is quite a treat!!!
ABC = 1.100
Lite ABC =1.120

I'm not saying the alcohol will scare me off, just it's going to have some kick.

I still think the ABC will be way high of 1.100.

edit: promashed it, sugar + honey + dme = 1.150 I'm not sure what sugar content the rasins and cider itself will add.
