So I visit the Straight Dope website and find this topic about brewing up a batch of Oreo Stout.
And I think to myself, "Hey, I love Oreo cookies, and I love brewing beer... I wonder..." My conception would be a porter. 2-row or MO base malt 1 Lb dark chocolate malt for rich cocoa flavor 1/4 Lb biscuit malt for a hint of breadiness 1/2 Lb caramunich for toasty sweetness 1/2 Lb flaked oats for creamy mouthfeel 1/4 Lb carapils for head retention Then instead of black malt, use 1 package of oreo cookies, creme centers removed, crushed and added to the mash. Northern brewer hops for bittering only. Nottingham or liquid English ale yeast. Mash at about 154, single infusion. Any suggestions? Maybe some lactose to sweeten? If so, how much is typical? Lactose should simulate the Oreo Cream too. You can actually buy the Oreo cookie crumbs so you dont have to scrape all those delicious cookies. Mash is kinda high for me, but if you like it like that, go for it.

i'd consider a vanilla bean in secondary to give the "cream" a little taste, ya know???

OK. Sounds good so far.
Mash at 152. Add lactose (any idea how much???). 1 vanilla bean, split, in secondary. Cool |
