We had the guy who invented One Step here for a chat once, a couple of years ago. He recommended StarSan as a sanitizer over One Step, and said that he was working on a product that would be similar. That made an impression on me. I've thought about using One Step for items that only come in contact with beer, like kegs, but I don't think I'd trust it with my wort.
