I've had a few batches of wine brewed from kits, with some success. now I'd like to try something more complex, maybe making my own from fruit.
Anyway, I've had a look for recipes. And I keep seeing things like, "six months to clear, then bottle and leave for a year before drinking" Are there any recipes you'd recommend for beginners, that take less time than that? Something that would brew and clear in a couple of months, and mature in about six or seven? Maybe one with a mixture of canned grape concentrate and fruit. I like the sound of grape with peach, plum, pear, strawberry, or ginger. |

I like the sound of grape with peach, plum, pear, strawberry, or ginger. No such thing as a quick wine. If you want quick you need to get into beer. Patience is key for wine and even more so for mead. Personally I don't drink any wine that is less than a year old and I am trying very hard to build up stocks and a rotation of sorts so I don't have to drink anything under 2 years. 1 year in the carboy(s) for fermentation and secondary, tertiary, etc. And 1 year in the bottle. Meads my goal is 1 year in carboy(s). 1 year in a corny keg and then bottle. Drink 3-4 months after bottling. --hountzmj |

I like the sound of grape with peach, plum, pear, strawberry, or ginger. I have made wine from a kit and also from Store flavored juices and ready to drink young or aged. Just made a Whit grape-cranberry-peach-mango wine from store bought juices using Cotes Des Blancs yeast. Used process from kit to do the wine. Added extra juice at clarifying stage. Add extra sugar to increase S.G. For higher alcohol content. Also added Calcium Carbonate to smooth out wine. Had bunch of coworkers try it. Said it was better than some store bought wines. Use your own imagination to think up recipes, and not let somebody else ruin the fun of doing it. Have a black cherry wine fermenting away right now using Cherry juice from store and a Black Cherry Concentrate I got from a whole foods store. Starting S.G. Is 1.080, using 12 cups of sugar in primary. You can drink this wine young or age it, if you prefer. |
