It's going to be 50df outside so I really want to take advantage of the weather. Problem is I forgot to order any ingredients. I've got a semi HBS here. I was thinking a simple wheat beer I can get Wheat DME there. If I remember right they only have two types of yeast there, Nottingham and Windsor yeast. I am assuming that those wouldn't be too great for a wheat?
There is one hope for another store. I've tried going to this store 3 times (it's an hour away). Every time I've been there they've been closed for one reason or another, so I have no clue what they have. Any ideas? I think it might be sans specialty grains also because I don't have a mill. |

I make a great extract Hefe with a recipe I got from this board:
5lbs Wheat DME -OR- 6lbs Wheat LME 1oz Hallertauer or Mt. Hood for 60 mins. Your favorite Hefe yeast- 3068, WL300, WL380, etc. |

Yeah, that's what I'm thinking but I don't think I'm going to be able to get ahold of a hefe yeast this weekend. Might brew something with an american ale?

I have 8oz of Mt. Hood which I figured would be ok. I would ideally like to add some "c" hops but I don't think I'm gonna be able to work that out.

I just made my American Wheat a few weeks ago, with US-05 dry yeast. I had made it before both times with some fancy liquid American Wheat yeast, but it came out pretty much the same with US-05. I was shocked.
What I mean is go ahead and brew with whatever you've got on hand. If it's a wheat-based fermentable with a British-style yeast, and Mt. Hood hops, you might just invent a new style! |

Mt Hood will work well in an American wheat. So if you can get the US05 it sounds like you're good to go. I've never tasted an Am. wheat with Nottingham or Windsor. If you can't get the US05, maybe the Windsor would be best as there are a lot of people who don't like Nottinghmam in light coloured beers. Personally I think the Windsor could work ok, but it's certainly experimental, so YMMV. (IMG:style_emoticons/brewboard/hehe.gif)

Picked up some us-05 and some us-06. Anyone have any experience with the 06 (wheat yeast)? I made my starter with the 05 and I'll keep the 06 on the shelf for next time. I was a little nervous because i've never heard anything about 06.
Also picked up 2oz of Cascades so I'm thinking 1oz of Mt. Hood for 60 and .5oz-1oz of Cascades at 5ish minutes. |

The WB-06 is a dry wheat yeast. (apparently Danstar have one on the way too. Anybody tried that one?) It's more balanced to cloves than banana in my experience (and from what others have reported). Definitely give it a try in a hefeweizen (just make sure you keep the bitterness much lower than with an American wheat, round the 15IBU mark). I'm going to give it a go in a dunkelweizen or possibly a weizenbock next and see how it works in those styles.
Your recipe should work well. You could even split the late addition half and half with Cascade and Mt Hood, but what you have will be fine. |

Yeah, I found a little on it, seems to be a good yeast. Gonna use it in a dunkelweizen.
